I used Joy the Baker’s recipe for Dark Chocolate Brownies, except I used Ghiradelli bittersweet chocolate, 1 1/2 cups of sugar, added 1 or 2 cups of toasted pecans (leaving some for the top), and used 2 tablespoons of strong coffee.

They were then left to cool in the fridge on a wire rack. While cooling I made Ganache from Joy of Baking. I added in a half a tablespoon of brandy. When the brownies were cool, I put the wire rack on top of a cookie sheet, and poured the ganache on top. I sprinkled the top with the remainder of the toasted pecans. And back into the fridge to cool off some more.

And then the caramel sauce. I’d never made it before and it took 3 tries until I could make it successfully. The first time, the sauce came out bitter (cooked it too long). The second, the sugar cracked instead of melting. So I decided to forgo the water to stop it from scorching, and it worked! I used a bit more butter than was called for and my sauce came out too runny. Recipe was from Simply Recipes. Homemade caramel is to die for. I let it cool, then drizzled it onto the brownies with a spoon. Back into the fridge to cool.

I used a sharp knife to cut them, wiping the blade after every cut. I put them into cupcake wrappers, and put them in a tin all wedged together.

Fudgy. Chocolatey. Friggen delicious.
